Greens need air — it’s the lack of air that accelerates rusting and rot. To prolong the life of your salad greens, keep them upright, if possible, and in perforated bags. Some storage-bag makers now sell perforated bags that allow air and moisture in and out. But to make your own, put your greens in a sealable plastic bag and make multiple stabs with a small, thin knife to enable circulation.
