If peas are cooked too long or in too much water, they can lose one-third of their vitamin C content.

Pouring frozen peas into boiling water and letting them cook just until that water boils again is about enough! Peas cook very fast! Try adding some chopped ham and a dash of sage to your cooking peas for a change of pace.
