Lycopene is the red pigment found in such foods as tomatoes, red peppers, pink grapefruit, and watermelon. Like beta-carotine which gives carrots, squash, and other yellow and orange fruits and vegetables their color, lycopene is a cancer fighting antioxidant which may trap destructive free radicals even better than beta-carotene does.

Tomatoes are the best lycopene source and because lycopene is not destroyed by cooking or processing eating tomato sauce is an excellent way to get a good supply of this most healthy pigment.

Findings about lycopene were reported in the International Journal of Cancer.
