Can overcooking vegetable cut the nutritional value.

Avoid mushy veggies

Avoid overcooking fruits and vegetables when you are preparing them. Some vegetables such as broccoli and cauliflower cook much faster than others such as carrots. I can never understand why broccoli, cauliflower and carrots are combined for a vegetable blend! If the carrots get done, there's nothing left of the cauliflower and broccoli!

For best nutrition, let those carrots stay firm and don't destroy the other vegetables

To avoid the broccoli & the cauliflower from getting mushy, cook the carrot first then put in the cauliflower & the broccoli 2-3 min before cooking ought to be done. Putting all 3 in the pot at the same time will turn the other 2 mushy.
